Based in Dummerston, Vermont, Scott Farm specializes in heirloom apples you can’t find in stores—and we have three of their most prized offerings boxed and ready, just in time for holiday baking season. All three of these apples (Orleans Reinette, Rhode Island Greening and Calville Blanc d’Hiver) are true heirlooms, with cultivation dating back hundreds of years. One has been in use since 1598. Each box contains 18 apples—6 of each variety.

What’s Inside:
Scott Farms considers Orleans Reinette a “true work of apple art.” Cultivated across New England since 1776, this apple is on the petite side, with golden yellow skin that turns brick red in the sun (and develops a dusting of golden lenticels—those teeny-tiny speckles you see on the skin of some apples). The crunchy yellow flesh is sweet and incredibly complex in flavor, with notes of nutmeg, rum and cola brightened with a hint of citrus.

Originating out of circa-1640s Newport, the Rhode Island Greening has smooth, grass-green skin splattered with triangular white lenticels and kissed with a barely-there blush of orange. Its flavor packs a seriously tart bite that’s tempered with notes of sweet white grape juice. If you prefer a tart apple for baking, these are perfect—they’re tart and complex enough to stand out, and won’t turn to mush in a pie.

French chefs have prized the Calville Blanc d’Hiver for baking since 1598, and it’s easy to see why. As its name suggests, this apple boasts wintry white flesh that’s remarkably fine-textured and crisp. Its bright, effervescent flavor reminds us of a glass of fine Champagne. Between its unique flavor and ability to hold its shape throughout long cook times, the Calville produces apple desserts unlike any other. (It’s even Scott Farms’ most-requested varietal for Thanksgiving pies.) Make a tarte tatin with one of these and you’ll never go back to supermarket apples.
